One thing that I noticed these days is my boys snack a lot. They are always looking for something to munch in between meals.

Maybe because they are restless with so much time in hand and snacking breaks up the monotony of our mundane lifestyle during this new normal.

Personally, snacking is not necessarily a bad thing IF I can make sure my kids are snacking healthily. In order to to that, I need to ensure that there are only healthy snacks in the house; none of those commercially bought hight sodium snacks and the likes of it.

Dark Chocolate Cornflakes Finger Breadstick is a snack that I regularly make at home. It started with me trying to use up bread that is close to its expiry date, but it became such a huge hit in our family that these days I have to actually purchase a fresh loaf just to make this snack for them.

Before we go deeper into the recipe, here are some of the health benefits that your kids can get from this snack – thanks to the two main ingredients!

Benefits of Dark Chocolate

Dark chocolate is packed with antioxidants, hence if you ever dreamt of snacking on chocolate every day, now you have an excuse to do so.

A bite of dark chocolate a day benefits your heart and also helps in improving the brain function which is extremely important, especially for our growing children. You just have to make sure that it is a real dark chocolate, and not those with sweetened milk or white chocolate.

I also use wholemeal bread to add to the nutritional value of this snack.

Benefits of Wholemeal Bread

Wholemeal bread is a good source of fiber. Fiber is the part of plant-based foods (also known as roughage) that the body can’t break down and passes through the body undigested, hence keeping our digestive system clean and healthy.

A diet high in fiber eases bowel movements and reduces the risk of bowel cancer. It also helps to make us feel fuller hence avoiding over-eating and gaining excess weight.

Let me share how to make this simple yet wholesome and delicious snack.

Dark Chocolate Cornflakes Finger Breadstick Recipe

Preparation time: 5 minutes
Baking time: 25 minutes
Coating time: 20 minutes

Ingredients:

  • Wholemeal sandwich bread
  • Dark chocolate
  • Cornflakes

Method:

  1. Cut bread into slices or bars of your desired size.
  2. Arrange sliced bread onto the oven rack.
  3. Toast in a preheated oven at 170C for 25 minutes.
  4. Bread should be toasted until dry and crispy.
  5. Pour cornflakes into a bag and press to crush.
  6. Pour crushed cornflakes into a bowl.
  7. Melt dark chocolate in a double boiler.
  8. Dip toasted bread in melted chocolate and coat with cornflake.
  9. Arrange coated bread on a tray to allow chocolate to solidify.
  10. Store in an airtight container.

This snack can be stored in room temperature as well as refrigerated. If you would like to try making this snack, I would recommend using at least 4 slices of bread because these are so delicious, you won’t stop at just one bite.
