Quick & Easy Homemade Moist Chocolate Cupcakes (No electric mixer required)

Who does not love chocolate?

Remember back in October last year when I shared my Moist Chocolate Chip Bun recipe? I also shared my favourite quote,

Today, we are going to add a lot of CHOCOLATE because I am going to share a super simple and delicious Moist Chocolate Cupcake recipe.

Most importantly, no electric mixer is needed for this recipe. These chocolate cupcakes are made entirely from scratch, they are literally the best!

They are super moist, fluffy, and loaded with a chock-full of flavour, as you can see above. The cake melts in your mouth and you will not be able to stop eating it!

Unlike other cupcakes, which become dry on the outside, these cupcakes remain moist for DAYS. In fact, they are even better the next day. It is crazy, but it is true!

This recipe is extremely easy and far superior to any store-bought cake mix available. So, shall we get started?

How to Make Moist Chocolate Cupcakes: Ingredients and Method

All it takes to make and serve these Moist Chocolate Cupcakes is about 30 minutes. Crazy right?

Always separate the dry ingredients from the wet ingredients first, then slowly mix all together. Keep following all of the steps below and you will be fine.

Ingredients

DRY INGREDIENTS

  • 125 g All-purpose flour
  • 50 g Cocoa powder
  • 180 g Sugar
  • 1 Egg
  • 1/2 tsp Baking soda
  • 1/4 tsp Sea salt

WET INGREDIENTS

  • 130 ml buttermilk or 130ml milk + 3/4 tablespoon lemon juice
  • 100 ml vegetable oil
  • 80 ml coffee
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 175°C. Line a 9-cup muffin pan with cupcake liners.
  • Add 3/4 tablespoon lemon juice into 130ml milk.
  • The acid from lemon juice will curdle the milk. Set aside.
  • In a large bowl sift flour, cocoa powder, baking soda and salt. Add sugar, stir and set aside.
  • In a separate bowl whisk all wet ingredients.
  • Add dry ingredients to wet ingredients and whisk just until combined.
  • Pour batter into cupcake liners.
  • Sprinkle your favourite toppings on it as we are not going to top up with frosting because these chocolate cupcakes are extremely good on its own.
  • Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool completely.
