Delicious (and Healthy!) Roasted Turmeric Chicken Drumstick Recipe

If you are a nursing mom, there isn’t a moment in the day that your body isn’t actively making milk for your little one. As a result, you constantly feel hungry. This hunger is the result of the calories your body burns while making milk. To keep you strong and healthy, you need to replenish your body with all the vital nutrients.

However, you may find yourself to be too tired that the thought of cooking up a storm simply puts you off. But fret not as I will be sharing a super simple recipe today for busy moms in need of yummy yet nutritious food.

The recipe I am sharing today is Roasted Turmeric Chicken Drumstick. I choose to roast it because roasting is not only a healthier option as opposed to frying, it also saves you from the need to stand at the wok frying the chicken hence giving you more time to attend to other stuff.

Turmeric for Breastfeeding Mothers

I also choose turmeric as the marinade as the anti-inflammatory properties of turmeric have been demonstrated in clinical studies to be important to the health and well-being of breast­feeding mothers for the prevention and treatment of mastitis as well as to ease the symptoms associated with breast engorgement. Turmeric is also believed to help boost the immune system of not only the mother but the baby benefits from it as well.

Preparation time: 5 minutes
Roasting time:  60 minutes
Serving size: 7 chicken drumsticks

Ingredients:

7 Chicken drumstick
1 teaspoon salt
2 teaspoon turmeric powder
1 teaspoon meat curry powder
Sliced garlic
Sliced ginger
Sliced big onion
Curry leaves

Method:

  1. Marinate chicken drumstick with salt, turmeric powder, meat curry powder, sliced garlic, ginger and curry leaves.
  2. Mix well and refrigerate overnight.
  3. Place clean and dry banana leaves on the baking tray (It is okay if you do not have banana leaves but it is a bonus if you have as it will give a wonderful aroma when roasted).
  4. Arrange the marinated chicken drumsticks on the tray.
  5. Scatter some big onion slices onto the drumstick.
  6. Place some butter on each drumstick (This step can be omitted but I simply love the buttery flavour and aroma).
  7. Roast at 220C for 30 minutes. Turn the drumsticks over and roast for another 30 minutes (You may skip the turning part and simply roast for a total of 60 minutes straight).

Isn’t it simple? This dish is as easy as 1,2,3. Just marinate, roast and serve. You do not need to tend to the chicken hence you can do so much within that 60 minutes of roasting time.
