Steamed Eggless Sweet Potato Cake to Boost Your Vision, Bones & Skin’s Health

With the many great benefits of sweet potatoes, it is important to include it in our diet. Today, I am going to share an easy steamed sweet potato cake that is not only delicious but is extremely pretty; you’ll love it at first bite.

One important thing to take note is that this recipe is made without egg which is suitable for those who cannot consume eggs.

Making these soft, light and spongy steamed cake is surprisingly easy! They are great as a healthy breakfast or a delectable school snack.

Steamed Eggless Sweet Potato Cake

Preparation: 1 hour (including batter rest time)
Steamed time: 15 minutes
Serves: 8

INGREDIENTS:

100g purple sweet potatoes
100g yellow sweet potatoes
240g plain flour
320ml milk
140g sugar
50g oil
1 teaspoon salt
1 teaspoon instant yeast

METHOD:

  1. Steam 100g each of purple and yellow sweet potatoes with pandan leaves till soft and tender. Pandan leaves adds a pleasant aroma to the sweet potatoes.
  2. Meanwhile, prepare the batter.
  3. In a bowl, mix plain flour, instant yeast, sugar and salt.
  4. Add milk and mix until it forms a smooth batter.
  5. Add oil and stir.
  6. Divide batter into 2 equal portions.
  7. Remove pandan leaves from steamed sweet potatoes and mash.
  8. Add mashed potatoes into the batter and mix.
  9. Cover and let batter rest for an hour.
  10. Scoop batter into piping bags.
  11. Pipe batter into paper cups. Squeeze both the piping bags simultaneously to get dual colour swirls.
  12. Steam for 15 minutes.
  13. These steamed sweet potato cakes remain soft and moist the next day. It makes a great choice for your children’s snack box even those attending the morning school session as we are often too rushed to prepare anything in the mornings hence we can easily prepare this the day before.
Steam purple and yellow sweet potatoes with pandan leaves till soft and tender. Pandan leaves add a pleasant aroma to the sweet potatoes.
Add mashed potatoes into the batter and mix. Let the batter rest for an hour till the batter is light, airy and bubbly.
Pipe batter into paper cups. Squeeze both the piping bags simultaneously to get dual colour swirls.

These healthy steamed cakes are soft and easy to digest, they are perfect for small children!
