Setelah minyak panas tuang bahan tadi dan tumis sehingga pecah minyak dan naik bau menggunakan api sederhana. Masukkan serai, bawang besar dan akar ketumbar. Reneh sehingga ia mendidih.<\/li>\n<li>Selepas itu masukkan isi ayam dan biarkan ia masak. Apabila sudah masak angkat isi ayam tadi dan toskan ia. Setelah ia sejuk carik-carikkan isi ayam tersebut dan ketepikan.<\/li>\n<li>Kemudian masukkan isi udang kedalam air rebusan tadi selama 5 minit, angkat dan tos udang tersebut.<\/li>\n<li>Menggunakan air rebusan yang sama, Mommy masukkan pula kulit dan kepala udang dan biar ia lebih kurang 15 minit.<\/li>\n<li>Padamkan api dan angkat kulit dan kepala udang lalu masukkan ke dalam mesin pengisar bersama sedikit air sejuk. Putar sehingga ia lumat dan tapis untuk mendapatkan airnya, kemudian tuangkan semula ke dalam periuk tadi.<\/li>\n<li>Buka semula api dan tuangkan pes ke dalam periuk beserta asam keping. Kacau ia lebih kurang 5 minit, kemudian masukkan santan pekat. Masukkan kesemua bahan kecuali pes asam jawa, garam dan srbuk perasa sehingga ia naik bau dan pecah minyak menggunakan api sederhana. Kacau sehingga ia garing.<\/li>\n<li>Setelah itu, barulah Mommy masukkan pes asam jawa yang dibancuh dengan sedikit air, garam dan serbuk perasa. Masukkan serai, bawang besar dan akar ketumbar.
