How to Make Collagen-rich Basic Chicken Stock

Today I’m going to write about collagen. Collagen is a protein found throughout our entire body. Our bodies produce collagen but as we age, our natural collagen production begins to decrease as soon as in our mid 20’s.

Collagen is the ‘glue’ that holds us together. When it is lacking, visible signs of ageing starts to surface such as fine lines and wrinkles. We also need collagen to maintain healthy joints and silky hair.

If you have searched for ways to slow down the ageing process, chances are you’ve come across collagen as the answer. A way to prevent collagen breakdown and boost collagen production can start with our diet.

What’s on our plate matters and if I could recommend one food to promote collagen production, I would say bone broth or stock as it contains bioavailable form of collagen that our body can use straight away.

Collagen-rich chicken stock is ready to be used to cook for any dishes.

I make my bone broth from chicken feet because they are so cheap and easily available. Chicken feet consist of skin, cartilage, tendons and bones.

Cooking them allows collagen to come out of the bones resulting in a nutritious broth that is rich in gelatin and collagen. Consuming this collagen-rich chicken feet broth can also improve our immune system and help reduce inflammation.

It is actually very easy to make our own collagen-rich chicken stock at home with minimal ingredients. The basic ingredients needed to make bone broth: Chicken feet, spring onions and garlic.

Equipment

  • Pressure Cooker

Ingredients

  • 500 g chicken feet cleaned and blanched
  • 8 cloves garlic with skin intact
  • 4 spring onions
  • 1 L water

Instructions

  • Clean chicken feet.
  • Sprinkle sea salt all over them.
  • Rub the salt thoroughly.
  • Pour boiling hot water over them and leave to soak for 10 minutes.
  • Remove from soaking water and rinse.
  • In a pot, bring together garlic and spring onion. Add cleaned chicken feet and pour hot water over.
  • Cover the pot and pressure boil for 20 to 30 minutes. Leave to cool once done.
  • Pour into jars and refrigerate.
