Easy Durian Crepe Without Artificial Colouring Recipe

Durian season is here again! It is that time of the year when the aroma of durian lingers in the air everywhere we go. Durian is regarded as the “King of Fruits” due to its distinctive shape and rich flavour. However, not everyone is a fan of this fruit. In fact, it is also known to some as being the smelliest fruit in the world!

Fans of durians, however, would love confectioneries made with durian (unless you are a durian purist who believes in only eating durian in its natural form). I’ve shared a simple yet delicious fluffy durian cake recipe during last year’s durian season.

This time around, I am sharing another mouth-watering recipe made with durian – Durian Crepe! This durian crepe recipe can also be used to make mango crepe, if you are not a fan of the King of Fruits. All you need to do is substitute the durian with mango.

Pillowy soft mouth-watering durian crepe

We start with the filling first as we need it to be chilled prior to assembling the durian crepe. The best part of making your own crepe is you can use any variety of durian, according to your budget.

There are two parts in making durian crepe—the crepe and the filling.

As usual with most of my other recipes, I refrain from using artificial food colouring. So, how do we get that vibrant yellow for the crepe?

Believe it or not, I use a dash of turmeric powder to achieve it. We don’t need to use much, roughly less than half a teaspoon will do and it hardly leaves any lingering taste on the crepe.

Now, let’s see how simple it is to make them.

Durian Crepe Recipe

Ingredients

DURIAN FILLING

  • 100 g durian flesh
  • 200 ml fresh milk
  • 1 tbsp sugar
  • 1 tbsp custard flour
  • 150 ml whipping cream

CREPE

  • 100 g plain flour
  • 300 ml fresh milk
  • 15 g icing sugar
  • 1 tbsp oil
  • 2 eggs
  • A dash turmeric powder (for colour)

Instructions

Durian Filling

  • Deseed durian flesh.
  • In a pot, pour milk, sugar and custard flour. Stir to mix.
  • Add durian flesh.
  • Cook on low heat until the mixture thickens.
  • Once thicken, remove from heat and leave to cool.
  • Use an electric mixer to whip whipping cream.
  • Scoop whipping cream into a piping bag.
  • Scoop durian filling into a separate piping bag.
  • Chill both piping bags while you make the crepes.

Crepe

  • In a bowl, combine eggs, icing sugar, plain flour and fresh milk.
  • Add a dash of turmeric powder for colour.
  • Add oil and mix thoroughly.
  • Pour batter through strainer.
  • Preheat crepe maker. If you don't have a crepe maker, you can use a non-stick pan.
  • Dip the crepe maker into the batter. If you are using a pan, pour a spoonful of batter into the pan and spread to get a thin layer of crepe.
  • Once cooked, remove crepe from crepe maker or pan. Do not flip the crepe as we need one side of the crepe to have a smooth surface.

Assembling the Durian Crepe

  • To assemble the durian crepe, lay out crepe on a flat surface.
  • Pipe a layer of whipped cream onto the crepe.
  • Pipe the durian filling on the whipped cream, followed by another layer of whipped cream.
  • Carefully wrap the crepe.
  • Chill before serving.
