Quick & Easy Teriyaki Salmon Recipe, Perfect for Your Kids’ Lunchbox

Have you ever had that moment when you feel that you are too exhausted to even think of cooking anything for the family? Well, let me assure you that you are not alone. As a mother, doesn’t matter if we are a working mom or a stay at home mom, we often find ourselves to be tired constantly.

I am a stay-at-home-mom with two school-going children; one in the morning while the other is in the evening session. I drive them to and from school. Since the school reopens with the New Normal, they no longer eat in the canteen but stayed put in their classroom for meals during recess. To spare them from the hassle of collecting food from the canteen, I now prepare lunchboxes for them to bring to school.

What I do every day is to plan for the next day’s meals. I cook quick and simple yet healthy meals so that I can still have enough time to execute other tasks.

One of my favourite choices for my kids’ lunchboxes is salmon simply because it takes a minimal time to cook. I cook it in homemade teriyaki sauce and serve it as a one-bowl meal with rice and hearty vegetables.

This is the perfect dish to cook when you are feeling too tired for anything complex as it is super easy and healthy yet is extremely delicious.

It’s so simple and doesn’t require lengthy marinating yet is super flavorful.

Preparation time: 10 minutes
Cooking time: 6 minutes
Serving size: 1 salmon fillet (can be multiplied according to your needs)

Ingredients:

1 salmon fillet
1 tablespoon honey
1 teaspoon sugar
1 tablespoon soy sauce
1 tablespoon water
Ginger slices
Garlic slices
1 teaspoon oil

Garnish:

Toasted sesame seed and green onions

  1. Combine sugar, honey, soy sauce, water, garlic and ginger slices.
  2. Stir until sugar is dissolved.
  3. Add salmon fillet and scoop the sauce over it making sure the fillet is nicely coated with the marinade.
  4. Leave to marinate for 10 minutes.
  5. Heat a teaspoon of oil in a pan.
  6. Pan-fry salmon for 3 minutes.
  7. Flip the salmon.
  8. Pour the marinade sauce and allow it to thicken.
  9. Served with steamed rice.
Combine sugar, honey, soy sauce, water, garlic and ginger slices. Marinade salmon for 10 minutes.
Pan-fry salmon for 3 minutes on each side.
Allow marinade to thicken.

This teriyaki salmon is deliciously flaky, juicy and absolutely yummy with the homemade teriyaki sauce.

Healthy and rich with omega-3 fatty acids, salmon is also great for breastfeeding moms because it contains large amounts of DHA, a type of fat important for the development of a baby’s nervous system.
