I grew up singing to that tune each time my Mum cooked us spinach. It made eating spinach much more interesting thinking that we can instantly be as strong as Popeye after our meal.

Now that I’m an adult, I learned that eating spinach doesn’t immediately make our muscles bulge like Popeye but it does give us a whole lot of nutrients that we should certainly include in our everyday diet.

Brazilian spinach is easy to grow at home from cuttings and grow well in our humid Malaysian weather.

Benefits of Spinach 

Spinach is a good source of iron. Iron plays a great role in the function of red blood cells which help in transporting oxygen around the body.

Spinach is also an excellent source of water-soluble vitamins (B & C), fat-soluble vitamins (A, E & K) as well as being a good source of manganese, magnesium and vitamin B2.

Those water-soluble vitamins are also the reason to avoid long and high-heat cooking which could destroy these nutrients. It is best to steam or a quick stir-fry to retain the nutrients.

Stir-Fried Brazillian Spinach with Anchovies.

Today I’m going to share a simple stir-fried Brazillian Spinach with Anchovies recipe.

I have an abundance of these at home as they are so easy to plant. We only need the leaves from the plant so just pluck the leaves and let it grow again. Every once in a while, cut the stems and plant it back into the soil to grow into a new plant.

Nothing beats having our very own organic home-grown vegetables.

Stir-fried Brazillian Spinach with Anchovies Recipe

Ingredients:

  • Brazillian Spinach
  • 3 cloves of chopped garlic
  • A handful of anchovies
  • 1 tablespoon dried wolfberries
  • 1 teaspoon chicken stock granules

Method:

  1. Pluck leaves from the stem.
  2. Discard the old leaves.
  3. Keep the stems if you intend to grow more Brazillian Spinach. Just poke them into the soil and watch them grow. They flourish in our hot and humid weather.
  4. Wash the spinach making sure to get rid of soil that may have stuck to the leaves.
  5. Toss to dry the spinach.
  6. Heat a tablespoon of vegetable oil.
  7. Sauté chopped garlic.
  8. Once fragrant, add anchovies and keep frying.
  9. Add Brazillian spinach.
  10. Stir to mix in the garlic and coat the spinach with oil.
  11. Stir-fry the spinach until you see the edges of the leaves start to soften about 30 to 60 seconds.
  12. Add chicken stock granules to taste (or you can just add salt).
  13. Add wolfberries (keichi).
  14. The spinach should be wilted but is still bright green.
  15. Quickly remove from heat and serve immediately.
Kids usually eat better if they are involved in the preparation of the meal so encourage them to join you in the kitchen.
