Tofu Omelette

Spruce up your ordinary egg omelettes by adding some tofu slices. Not only for added texture but extra protein. This recipe adds some extra seasonings and aromatics to make it truly a dish to relished.

chicken eggs

red onion

bird's eye chilies
red & green

white pepper

tsp
salt

margarine

tbsp
mayonnaise
Instructions
Finely dice onions and chilies.
Slice tofu into circles.
Beat eggs with chillies, salt, pepper, butter, mayonnaise and the tofu circles.
Mix just until incorporated being careful not to break up the tofu circles.
Cook like an omelette until golden brown.
