Singgang Ikan Tolok

This traditional dish is perfect eaten with white rice. Much like the previous two dishes, singgang is a type of flavourful soup. It's full of veggies and seasoning and can be a perfect, simple afternoon lunch with the family.

fermented fish sauce

Instructions
Slice garlic, ginger and bruise one lemongrass.
Bring a pot of water to the boil on medium high heat.
Add in the tamarind slices, garlic, lemongrass, chilies.
Allow to simmer for a couple of minutes stirring occasionally.
Add in the fish, salt and the budu and stir well
Serve with white rice.
