beef tripe
Salem leaves
kaffir lime leaves
large onions
tomato
bird's eye chili
lemongrass
torch ginger
kerisik
toasted coconut
calamansi lime
salt
sugar
Instructions
Cut the tripe into small bite sized pieces.
Boil the tripe in a pot full of water until tender. Drain and set aside.
Finely slice the salem leaves, kaffir lime leaves, onions, chilies, tomatoes, lemongrass and torch ginger.
In a bowl, combine the vegetables and aromatics along with a spoonful of kerisik, calamansi lime juice, salt and sugar to taste.
Serve as is.
