Instructions
Clean the the silkie chicken meat thoroughly. Chop chicken into pieces, and boil it in hot water to remove the blood. Set aside.
Soak Wood Ear Fungus in water to soften it. Once soft, remove from water and chop it up into pieces. Rinse the red dates and remove the core.
In a pot of water, add the wood ear fungus, red dates, longan, and ginger slices. Add the silkie chicken pieces, and bring the water to a boil.
Once it is boiling, turn the heat to low and simmer for one hour, or until chicken meat is cooked. Season with salt to taste, and serve hot.
