Instructions
Peel approximately 3 medium-sized potatoes. This will give us about 1 ½ cup of mashed potato.
Steam until the potato is soft.
Using a fork, mash the cooked potatoes while they are still warm.
Add breadcrumbs, chilli powder, salt and cornflour and mix until they are well combined.
Knead until the mixture forms a soft dough.
Transfer the dough onto a working surface.
Press until it becomes ½ inch thick.
Using a cookie cutter or the middle of a donut mould, cut out circles from the dough.
Use a straw to poke holes for the eyes and spoon to shape the smiley mouth.
Lightly brush the surface of the smiley potatoes with oil.
Bake in a preheated oven at 180°C for 75 minutes.
Alternatively, you can refrigerate them for 30 minutes before deep frying in hot oil.
