Wash and peel the water chestnuts, and cut into pieces. Rinse the wolfberry.
Clean the chicken breast and dice it up. Add salt, egg white and corn starch into a bowl with the chicken before mixing it together.
Heat up the pan with cooking oil. Sauté the scallions, minced ginger and minced garlic until it is fragrant. Add diced chicken breast and water chestnuts along with 15ml of water and salt into the pan, stir-fry it.
Add the wolfberry into the pan and stir fry until the chicken breast is cooked thoroughly. Serve hot.
