Slice mandarin oranges and arrange the oranges on the roasting plate. Place chicken on the bed of orange slices. Stuff the balance of oranges and red dates in the chicken cavity.
Roast in a preheated oven at 230°C for 30 minutes.
After 30 minutes, remove from oven and glaze the chicken thoroughly. Roast for another 15 minutes.
Remove from the oven. Add soaked mushrooms and dried wolfberries. Glaze again.
Roast for another 15 minutes.
Once done, transfer to a serving plate and serve immediately.
