pickled sour plums

shiitake mushrooms
thinly sliced

ginger

salted vegetables
sliced
chopped spring onions & coriander
for garnishing
fried shallot
for garnishing
Instructions
Rub salt on both sides of the fish and set in a heatproof dish for steaming.
Insert 4-5 slices of ginger into the fish belly.
Arrange the steaming dish.
Arrange the sliced salted vegetables, tomatoes, sour plum, and mushrooms around the fish and place sliced ginger slices on top.
Add 50 ml of water (optional)
Complete arrangement of steaming dish and steam for 8-10 mins or until fish is thoroughly cooked.
Remove from the steamer.
Garnish with spring onions, fresh coriander, and fried shallots.
Notes
TIP: You are recommended to use fresh fish instead of frozen fish. Add more ginger to remove any fishy smell.
