Cooking Creamy Salmon Pasta with Sazzy Falak

A simple, on-the-go meal that requires little preparation and few ingredients may just be the thing you need. What’s better than a rich and creamy salmon pasta dish with zucchini and cherry tomatoes? Something your kids and spouse will surely love.

Motherhood.com.my in collaboration with Alce Nero invited Sazzy Falak, Malaysian actress, TV personality, entrepreneur, and fashion icon for a special Facebook live episode of Makan Apa Hari Ini where she walks us through her Creamy Salmon Pasta recipe.

In the Facebook live event here, Sazzy talks about why she loves Alce Nero including how it’s organic and free from pesticides, GMOs and chemicals. She says that she’s always on the market for organic products that are safe for her family, especially for her 1 and a half year old son. And Alce Nero definitely fits the bill.

Sazzy loves cooking pasta for her family because it’s simple and quick, especially given her busy schedule. Something which I’m sure all mums can relate to. Her favourite Alce Nero products include Kids Pasta, the Chestnut Spread, and the Blueberry Jam which she loves eating for breakfast.

In her recipe, Sazzy uses two Alce Nero organic products, the Tricolore Spaghetti and the Extra Virgin Olive Oil. The multicoloured spaghetti is dyed with natural pigments from vegetables like spinach and tomato, making it 100% safe for kids. Creamy Salmon Pasta

A rich spaghetti dish with salmon, zucchini and cherry tomatoes.

Ingredients

  • 1 packet Alce Nero Organic Tricolore Spaghetti
  • 2 tbsp Alce Nero Organic Extra Virgin Olive Oil
  • 2 cups cherry tomatoes
  • ½ zucchini
  • 1-2 salmon steak (with skin on)
  • 2 cups cooking cream
  • 1 cup pasta water
  • 1 handful sliced garlic
  • Parmesan cheese for garnish grated
  • Himalayan salt and black pepper to taste

Instructions

  • Boil some water in a pot with some Alce Nero Organic Extra Virgin Olive Oil and a couple tablespoons of Himalayan salt.
  • Add in the Alce Nero Organic Tricolore Spaghetti according to your desired serving size as indicated on the package. Set a timer for your pasta (8 minutes).
  • While the pasta is cooking, prepare your other ingredients. Slice the garlic, cut the zucchini into strips and cut the cherry tomatoes into halves.
  • Generously season the salmon with Himalayan salt and black pepper, making sure to cover all sides. Leave for several minutes to marinate.
  • If your pasta is done cooking, remove from the heat, strain and set aside. Remember to save some of the pasta water (a cup will do).
  • Heat some Alce Nero Organic Extra Virgin Olive Oil in a pan and fry the salmon skin-side down first. Flip the salmon after a while and let it cook thoroughly.
  • Once cooked, mince the salmon and set aside.
  • In the same pan, sauté the garlic before adding in the zucchini with some salt to taste.
  • Pour in the cooking cream once the zucchini looks cooked. Stir well and add the Parmesan cheese and black pepper.
  • Add the salmon, stir to combine, and taste for seasoning. Add more salt if needed.
  • Add cherry tomatoes and the cooked spaghetti with some pasta water for extra gravy.
  • Stir once more to combine and serve!

Notes

  • Add in Alce Nero Organic Extra Virgin Olive Oil and Himalayan salt or any salt in the boiling water before adding in the pasta to flavour the pasta.
  • Marinate the salmon slice by rubbing Himalayan salt or any salt and black pepper thoroughly on all sides of the salmon to make it more delicious.
  • Add in heaps of garlic in pasta, as there is no such thing as 'too much garlic' in pastas.
  • Make sure to follow the boiling duration written on the pastas’ packaging to get an 'al dente' pasta.
