Motherhood Recipe: Simple Breakfast & Hi-Tea Meals for Toddlers

While we are counting days until the Movement Control Order (MCO) in Malaysia is over, let us take a deep breath and see the bright side of things. Parents are able to spend more quality time with their kids, most of us are enjoying plenty of rest at home, and most important of all, everyone (including you and I) is able to enhance and discover some new skills!

One of the things that attracts me the most is how mothers are sharing their recipes with everyone – be it between their friends or on their social media. This time, Motherhood Recipes wants to share with you a few simple recipes for your toddler, created by Puan Siti Nurul Hidayu.

1. Spiral Carbonara

INGREDIENTS:

  • Spiral pasta
  • Red spinach
  • Eggs
  • Chopped onions and garlic
  • Mixed herbs
  • Black pepper
  • White pepper
  • Cream cheese
  • Unsalted butter
  • Full cream milk

INSTRUCTIONS:

  1. Boil the spiral pasta and set it aside.
  2. Sauté chopped onions and garlic with unsalted butter, and immediately, add in the eggs.
  3. Pour in full cream milk, cream cheese, red spinach, and boiled spiral pasta.
  4. Sprinkle in some mixed herbs, black pepper, and white pepper.
  5. Stir well and it is ready to be served!

TIPS: Since this menu is for your toddler, do not put in too much black pepper and white pepper to avoid making the dish spicy.

2. Homemade Chicken Nuggets

INGREDIENTS:

  • Shredded chicken
  • 2tbsp of cornflour
  • Minced carrots
  • Minced Chinese cabbage
  • Black pepper

INSTRUCTIONS:

  1. Blend shredded chicken with a little bit of water.
  2. Mix blended chicken with cornflour and vegetables.
  3. Sprinkle in black pepper and steam until cooked through.
  4. Once it is cooked, put it aside to let it cool. And then you may use a cookie-cutter to shape your nuggets or make small balls (flatten slightly0.
  5. Deep-fry the nuggets and do not forget to freeze leftover purée.

3. Duchess Potatoes

INGREDIENTS:

  • Potatoes
  • Mixed herbs
  • Black pepper

INSTRUCTIONS:

  1. Steam potatoes until they turn soft and then, mash them to your desired consistency.
  2. Mix with black pepper and make small balls from the purée.
  3. Sprinkle in mixed herbs.
  4. Bake at 170° for 30 minutes.
  5. And it is ready to be served!

4. Dragon Fruit Sago 

INGREDIENTS:

  • A packet of small sago pearls
  • Coconut milk
  • Dragon fruit purée

INSTRUCTIONS:

  1. Cook the sago pearls: fill in a medium pot with adequate water and bring it to boil. Add in sago pearls to cook, stir the mixture constantly until it becomes translucent (about 20–30 minutes).
  2. Once it is cooked, pour the mixture through a sieve to drain excess water. Wash away the starch under running cold water and drain it again.
  3. Mix cooked sago pearls with dragon fruit purée and put in the fridge to chill.
  4. In a small saucepan, add in coconut milk. Boil over low heat and stir constantly. And then, leave it to cool at room temperature. Chill it in the fridge.

5. Gula Melaka Sago

INGREDIENTS:

  • Sago pearls
  • Pandan leaf
  • Dates
  • Full cream milk

INSTRUCTIONS:

  1. Similar to ‘Dragon Fruit Sago’, boil sago pearls for 20–30 minutes, wash it under running cold water, and drain excess water.
  2. Blend pandan leaf, sieve it, and keep the water.
  3. Mix boiled sago pearls with water from the pandan leaf until the sago mixture turns green. Then, chill it in the fridge.
  4. Blend the dates with full cream milk and it is ready to be served with the chilled sago mixture.
