Penang Hokkien Mee

It is a popular dish in Malaysia and other parts of Asia. The delicious flavour of cooked prawns make it delicious. You can include pork bones in the broth. However, we have used here chicken bones as it is nutritious for the baby in the womb. It is perfect for the first pregnancy trimester when the nausea attack is at its peak. Try this tasty-healthy traditional Malaysian soup dish.

Ingredients

  • 5-6 spinach leaves
  • 90 g bean sprouts
  • 300 g egg noodles fresh
  • 100 g rice vermicelli noodles
  • eggs hard-boiled
  • prawns large-sized, washed and peeled, cut into halves
  • 5-6 red chillies dried
  • 3-4 cloves garlic roughly chopped
  • 20 g  dried shrimp
  • 30 ml vegetable oil
  • 300 g chicken bones
  • 1 and 1/2 tbsp grated palm sugar
  • salt as required

Instructions

  • Soak the dried chillies in water for 30-35 minutes. Drain the water and make it in to a paste with garlic cloves. Keep it aside.
  • Fry the shrimps for 3 minutes on a medium heat. Then, add prawns. Cook for 10 minutes.
  • Add the chilli paste to it. Once it becomes fragrant, add the chicken bones to it.
  • Add the palm sugar, salt, and around 1 litre of water. Cook for 15-20 minutes.
  • Cook the broth on low heat for around 1 hour or until you get your desired thickness.
  • Now, in another pot, boil spinach and sprouts for 10 minutes. Boil the noodles separately.
  • Serve the noodles with hard-boiled eggs, spinach, and sprouts. Pour broth, sprinkle black pepper on it.

Notes

We have not used chilli sauce here as it may cause heartburn for pregnant women. For the same reason, we have reduced the use of chilli in broth. In some hawker-style recipes for this dish, you may find prawn shells. But, we have not used them in the recipe here as it may cause indigestion.

Pan Mee

The delicious broth, including the fried anchovies and flat, hand-torn noodles, also known locally as pan mee, comes out as a wonderful surprise for your tastebuds.   • 1 bunch mani cai also known as cekur manis/sayur manis, boiled
  • 1 cup anchovies dried
  • oil
  • 1 cup anchovies washed
  • 300 g pork bones washed
  • 2 stalks scallion
  • 10 cup water
  • salt as needed
  • 2 cups all-purpose flour
  • 1 egg large
  • 100 g ground pork
  • 3 mushrooms shiitake, soaked into warm water, sliced
  • 1 tbsp black soy sauce
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • black pepper for taste
  • 1 tsp corn starch
  • 1 clove garlic minced

Instructions

  • Add pork bones, scallions, anchovies, salt, to boiling water. Boil the soup for at least 1 hour.
  • Make a dough from the flour, egg, and water in a large bowl. Cover it with a cloth. Set aside for 1 hour.
  • Stir fry anchovies, pork bones, scallions on a medium flame.
  • Add the ground pork and mushrooms to it and stir fry. Add sesame oil, sugar, oyster sauce, cornstarch and water.
  • Using a pasta machine or by hand, cut the dough into noodles accordingly and boil them.
  • Pour the soup into bowls. Add boiled mani cai, boiled noodles, ground pork, mushrooms, and anchovies to it.
  • Garnish with soy sauce and serve.

Notes

Mani cai is safe to consume in pregnancy but you should not eat it raw.

  • 1 tbsp barley soaked into water for around 2 hours

  • Now, transfer all of them to a pressure cooker and add 3 cups of water. Wait for 3 whistles.
  • Next, heat oil in the pan and add tomatoes. Stir fry for 2 minutes.
  • Pour the boiled barley-lentil mix into the pan. Mix salt, pepper, and coriander and stir well.
  • Add water if needed. Boil it for 2-3 minutes. Keep stirring occasionally to avoid sticking at the bottom. Serve hot.

  • 200 g chicken breast or thighs boneless, fresh

  • 2 tbsp fish sauce

  • lime wedges

Instructions

  • Sauté the green onion, ginger, clove, and coriander seeds for 30 seconds. Add water to it.
  • Add cilantro sprigs and chicken. Remove the chicken once it is cooked.
  • Let the broth boil and set aside the solids.
  • Shred the chicken and keep the chicken aside.
  • Now, pour boiled noodles into a bowl.
  • Add some more chopped green onions, chicken pieces and broth.
