Ingredients

Ingredient A

  • 500 g chicken
  • 1/2 cup water
  • 1 tbsp fennel
  • 1 and 1/2 tbsp cumin
  • Javanese acid water according to your liking
  • cooking oil
  • lemongrass

Ingredient B (Pounded)

  • 20 g ginger
  • 10 g fresh turmeric
  • 10 g galangal
  • 4 shallots
  • 2 cloves garlic

Instructions

  • Marinate the chicken with salt and half of the pounded ingredients for about 1 hour.
  • Grill until it is fully cooked.
  • Heat the oil in the pan.
  • Sauté the pounded ingredients until fragrant.
  • Add in the lemongrass, fennel, cumin, Javanese acidic water and salt.
  • Add some water and leave to boil. Pour the gravy on the chicken.

  • 2 slices chicken cleaned
  • 1 slice ginger
  • 1 cinnamon
  • 4 cardamom
  • 4 cloves sliced

  • 1 tbsp black pepper

  • A few carrots cut into cubes
  • A few spring onion sliced

Instructions

  • Boil the water in a pot with the soup spices.
  • Insert the ginger, shallots, and all of the spices into the pot.
  • Add the chicken kurma curry powder and mix all the ingredients for a while.
  • Add the chicken and mix the ingredients until the kurma curry powder is mixed well with the chicken.
  • Let it boil.
  • Add the carrots and let the carrot boil until soft.
  • Season the herbal soup with black pepper and salt.
  • Sprinkle the spring onion and leaf celery on top.
  • Let it simmer for a while and then serve it with a bowl of hot rice.
