Five Freezer-Friendly Snacks (That Actually Taste Good!)

Freezer-friendly snacks are great for saving time and delicious! Do you ever feel like your life is too tiring? That’s how I feel most days, too. There are so many things I need to do that I’d rather hide in my bedroom than deal with them all. IT’S REAL. 

Even so, it’s important to keep my children happy and full! Of course, as a mother I would constantly search for new recipes and menu ideas for those little hungry monsters (my kids, of course!).

Mothers are always busy so freezer-friendly snacks are the way to go! It’s easy and quick. Even so, my number priority is making them taste really delicious, or else my kids won’t really eat them.

So, what are we waiting for? Let’s jump in making these mouth-watering recipes that are guaranteed likeable! 

5 Finger-Licking Freezer-Friendly Snacks That Will Make Your Kid’s Tummy Happy!

1) Pizza Scrolls

Ingredients:

  • 3 cups self raising flour 
  • 1/2 cup ham or diced bacon 
  • 1/4 cup pineapple pieces 
  • 50 grams butter 
  • 200 cheddar cheese 
  • 250 ml milk

Method:

  • Preheat the oven to 220ºC. Sift flour and salt into a bowl. 
  • Rub in the butter until the mixture looks like fine bread-crumbs. 
  • Stir in enough milk to make a soft dough. 
  • Knead on a lightly floured board. Roll to form a rectangle that is roughly 40cm x 25cm. 
  • Spread the ham and pineapple over the dough using a blunt knife. 
  • Sprinkle 3/4 of the cheese over the top. 
  • Roll up the dough starting from a long side first. 
  • Cut 10 × 4 cm pieces from the roll. 
  • Place these pieces close together, cut side up on a greased baking tray. 
  • Sprinkle the rest of the cheese over the top. 
  • Bake in the oven for 15-20 min.

Pizza Scrolls are ideal for school lunches or on-the-go snacks.  You can also make a big batch and freeze it because it’s  incredibly simple to create! 

2) Cheesy Top Lasagna Cups

Ingredients:

a) Cheese Sauce 

  • 1 cup tasty grated cheese 
  • 50 grams butter 
  • 2 tbsp plain flour 
  • 1 1/2 cups milk 

b) Lasagne Mince 

  • 500 grams minced beef 
  • 1 tsp crushed garlic 
  • 1 onion finely diced 
  • 1 carrot grated 
  • 1 zucchini grated 
  • 420 grams tinned tomatoes finely diced 
  • 1 tbsp gravy mix 
  • 1 tbsp Worcestershire sauce 
  • 500 grams fresh lasagne sheets 
  • 1 cup tasty grated cheese 
  • 1 tbsp olive oil spray (to spray muffin tins)

Method:

a) Cheese Sauce 

  • Place butter in saucepan over low heat until melted. Add plain flour & whisk together. 
  • Slowly add milk, 1/4 cup at a time. 
  • Continue to whisk until smooth and starts to thicken, before adding more milk. Once all milk is added, whisk again, and add grated cheese. 
  • Whisk again until cheese has melted, and mixed through evenly. 

b) Lasagne Mince 

  • Preheat oven to 180ºC. Dice onion, grate carrot and zucchini. Add to fry-pan over high heat, add garlic and brown slightly. 
  • Add the mince and brown well. Add the tin of tomatoes, Worcestershire sauce and gravy mix to frypan. Stir well, then allow to thicken over medium to low heat for 5-10 minutes. 
  • Set mince aside to cool slightly, then spray muffins tin olive oil.
  • Cut the fresh lasagne sheets in half, press into muffin tins so that you have 4 corners poking out like a little basket.
  • Spoon 1 tablespoon of lasagne mince into the bottom of the pasta lined muffin tin, then 1 tablespoon cheese sauce. 
  • Repeat until you have filled the muffin tin. Sprinkle the top with the extra grated cheese.
  • Cook in the oven for 15-20 minutes, or until golden brown.
  • Allow to cool slightly before removing from tins. 
  • Serve with a fresh garden salad for dinner or super tasty afternoon tea individual snack.

3) Milo Balls

Ingredients:

  • 250 grams crushed of milk arrowroot biscuits  
  • 1/4 cup desiccated coconut (for rolling) 
  • 4 tbsps Milo

Method:

  • Crush the biscuits until small or fine (this works well in a food processor if you have one!). 
  • Add the Milo and mix until well combined. 
  • Roll into teaspoon sized balls with your hands (damp hands make the balls easier to handle) and then roll in the shredded coconut to coat. 
  • Refrigerate for 30 minutes, or until firm.

You won’t be disappointed if you make these Milo Balls because your kids will totally enjoy it! Especially when they love sweet snacks.

4) Cheesy Beef Puffs

Curry puffs, but make it cheesy! 

Ingredients:

  • 1 cup minced beef
  • 1/2 cup cream cheese 
  • 1/2 cup grated cheese 
  • 2 puff pastry

Method:

  • Preheat the oven to 200ºC. In a large bowl, combine the mince and cheeses. 
  • Cut each sheet of pastry into 16 pieces (cut into quarters then cut each quarter into quarters). Place a teaspoonful of mince mixture into the center of each piece, then fold over to form a triangle.
  • Press the edges firmly together. 
  • Place on a baking tray and bake at 200ºC for 15-20 minutes, or until golden.

5) Homemade Sausage Rolls

Who doesn’t like a good sausage roll? Those savoury pastry snacks coating your tongue, allowing you to taste each ingredient in the roll? Yummy!

Ingredients:

  • 500 grams minced sausage 
  • 2 puff pastry 
  • 2 sheets
  • 1 cup breadcrumbs 
  • 1 egg 
  • 1 zucchini, grated 
  • 1 mixed herbs 
  • 1/2 onion, diced 
  • 1 carrot, grated

Method: 

  • Preheat oven to 200ºC. In a bowl, mix the minced sausage, diced onion, egg, mixed herbs and grated veggies all together.
  • Season well with salt and pepper. Add the breadcrumbs and again, mix well. 
  • Wrap up the mince in the puff pastry, brush with milk. 
  • Bake at approximately 25 minutes, or until golden brown.

5) Savoury Muffins

Ingredients:

  • 2 zucchinis, grated 
  • 2 medium potatoes, peeled and grated 
  • 2 medium brown onions, grated 
  • 3 medium carrots, peeled and grated 
  • 1 1/2 cups ham or bacon pieces 
  • 1 cup cheddar cheese, grated 
  • 3 medium sized eggs 
  • 3 1/2 cups milk 
  • 3 cups self raising flour 
  • 2 cups wholemeal self raising flour 
  • 1 tsp salt

Method:

  • Preheat your oven to 200ºC. Muffin cases are perfect for this recipe as it does have a tendency to ‘stick’ (and makes them more portable). 
  • Sift the flours and salt into a bowl and make a well in the centre. In a separate bowl combine the egg and milk, and combine well. 
  • Make a well in the centre of the flour and pour the liquid in slowly, using a whisk to bring the batter mixture together without overworking the mixture. 
  • Add the grated vegetables and mix with a wooden spoon until just combined. Mixture should be sticky. 
  • Spoon into the muffin cases so they are 3/4 full and top with a pinch of cheese on each muffin.
  • Bake for 20 – 25 minutes, or until golden and cooked through.

This recipe is packed with fresh veggies, is nutritious, freezer-friendly, and will fill empty stomachs and lunch boxes.

Listen, my dear Mummies. Don’t ever feel bad for making these freezer snacks. I know some people might criticise us for not making fresh food on-the-go and say that we are a ‘bad mother’. 

However, that’s not true at all! All mothers work hard enough to even work and serve their husband, children at the same time.
