Pasta Penne Cili Padi Puff

Looking for some spicy fusion food to wow your guests? Here's a recipe for a puff pastry stuffed with spicy penne pasta.
Be careful how much cili padi you use though, remember to adjust the recipe if you can't handle the heat.

Ingredients

  • 1/2 packet penne pasta cooked
  • 5 cloves garlic diced
  • 10 bird's eye chili sliced
  • 100 g minced chicken
  • 2 tbsp oyster sauce
  • 2 coriander stalks finely chopped
  • Juice of 1 lime
  • salt and pepper to taste
  • 2 sheets puff pastry
  • 1 egg for egg wash

Instructions

  • Sauté garlic and bird's eye chili until fragrant, then add minced chicken and cook until done.
  • Add oyster sauce and mix well, then add cooked penne pasta, coriander, and lime juice. Let the filling cool.
  • Fill the puff pastry with the filling and cover with crisscrossed puff pastry.
  • Brush with egg wash, sprinkle with coriander on top, and bake at 160°C for 25 minutes or until puff pastry is cooked. Ready to serve!

Udang Kari Hijau Thai

If you've never tried green curry, this is the perfect dish for a beginner.
If you don't like prawns (or are allergic), omit from the recipe entirely. It'll taste just as amazing.

Ingredients

For Green Curry Paste

  • 3 green chilies
  • 2 shallots
  • 2 cloves garlic
  • 1/2 inch ginger
  • 1 sprig cilantro
  • 1 lemongrass white part only
  • 1 lime juiced
  • 4 kaffir lime leaves
  • 1/2 inch galangal
  • 1/2 tbsp coriander seeds
  • 1/2 tsp cumin powder
  • 1/2 tsp black pepper powder
  • 1 tsp fish sauce
  • 3 tbsp olive oil 

Other Ingredients

  • 2 tbsp green curry paste
  • 400 ml coconut milk
  • 1 tsp sugar
  • 2 tbsp fish sauce
  • 200 g prawns
  • 100 g sliced chicken breast
  • 100 g button mushrooms
  • 100 g baby eggplants or regular eggplants
  • 2 kaffir lime leaves
  • 4 red and green bird's eye chilies
  • 1 tomato cut into 6 pieces 

Instructions

  • To make the green curry paste, simply blend all the green curry paste ingredients in a blender until smooth. Store in a glass container.
  • To make the curry itself start by heating oil in a pan and add the garlic.
  • Add two tablespoons of the green curry paste and sauté until fragrant.
  • Add coconut milk and simmer until almost boiling.
  • Add fish sauce, sugar, eggplants, and chicken.
  • Reduce heat and simmer until chicken is cooked.
  • Then add prawns, tomato, and button mushrooms.
  • Add kaffir lime leaves and sliced chilies.
  • Remove from heat and sprinkle with cilantro. Serve with rice.

Garlic Soy Chicken Wings

Forget Buffalo wings, try this Asian-inspired version of the popular side dish. You can never go wrong with soy sauce and garlic as seasonings. Perfect for eating on its own or with some rice.

Ingredients

For Chicken Wings

  • 500 g chicken wings
  • 1 cup all-purpose flour for frying
  • 2 cups cooking oil
  • 1/2 packet garlic soy Sauce
  • seaweed powder
  • sesame seeds

For Rice Balls

  • 1 cup hot plain white rice softened with a little water
  • 1 tbsp mayonnaise
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1/2 tsp vinegar
  • 1/2 tsp sugar
  • 1 tbsp seaweed powder
  • 1 tsp sesame seeds
  • salad leaves garnish

Instructions

For Chicken Wings

  • Place chicken wings and flour in a covered container.
  • Shake until evenly coated.
  • Marinate for half an hour.
  • Heat oil and fry chicken wings until crispy.
  • Remove and drain excess oil.
  • When cooled, place in a covered container with Garlic Soy Sauce. Shake until evenly coated.
  • Serve and sprinkle with seaweed and sesame seeds.

For Rice Balls

  • Mix all the rice ball ingredients, adjusting the taste.
  • Shape into small balls.
  • Arrange rice balls, chicken wings, and salad.
  • Refrigerate it first before removing from the container.

Muffin Spiral Pasta Bakar

This Italian fusion dish uses moulds to give simple pasta a bite-sized shape, turning it from a main course to a sort of appetiser or finger food. Perfect for parties where guests can mingle.

Ingredients

  • Spiral pasta
  • 350 g Mushroom pasta sauce
  • 1/2 onion diced
  • 3 cloves garlic minced
  • 3 tbsp olive oil / cooking oil
  • 1/2 cup minced chicken
  • 1 tsp black pepper powder
  • 1 tsp flavoured pepper powder
  • green, red & yellow capsicums diced
  • 1 can button mushrooms, sliced
  • Salt and sugar to taste
  • 1 slice cheddar cheese
  • Mozzarella cheese
  • mint leaves

Instructions

  • Cook the spiral pasta until al dente. Drain and toss with a little oil and salt. Set aside.
  • Heat a pan and add olive oil.
  • Then, add diced onion and minced garlic. Sauté until fragrant.
  • Add Mushroom Pasta Sauce and stir well.
  • Add minced chicken and stir again.
  • Next, add button mushrooms, capsicums (green, red, and yellow).
  • Do not add all of it, save some for garnish.
  • Season with salt and sugar to taste.
  • Add black pepper powder and flavoured pepper powder.
  • Finally, add cheddar cheese and stir. Wait a few minutes until the sauce thickens slightly. Turn off the heat.
  • Add cooked spiral pasta into the sauce.
  • Stir well and add some Mozzarella cheese. Spoon the spiral pasta mixture into muffin moulds.
  • Place some capsicum slices on top, sprinkle with a little black pepper powder.
  • Bake in the oven for 10 minutes with both upper and lower heat at 200 degrees Celsius, and another 10 minutes with only upper heat until crispy.
  • Cool before removing from moulds.
  • Garnish with mint leaves. Ready to be enjoyed.
