Snowman Snowball Christmas Cookies

Snowball cookies are a Christmas classic that is a must-bake during the holidays. They literally look like snowballs and make for a really nice centerpiece at the table.

Snowball cookies are soft, nutty and buttery cookie coated with dusting of powdered sugar on the outside. These melt-in-the-mouth cookies are so delicious, they make the perfect holiday treat for Christmas.

This light and crumbly cookie does not call for eggs in the ingredients.

Ingredients are kept to the minimal so you would probably have most of them in the kitchen already.

While we prefer to use pecans for this as pecans are pretty synonym with Christmas, you can also use other nuts to your preference. There is really no right or wrong nuts for this. In fact, we can totally omit nuts too if your kid is allergic to them.

How to Make Snowman Snowball Cookies

To make these cookies, we need to toast the nuts first. Toasting improves the texture of the nuts so that they stay crisp in the cookies. I used 3 types of nuts in this recipe – pecan, almond and walnut. You can simplify the recipe though by using only one type of nut. Chop the nuts. You may use food processor or simply chop them manually.

An electric mixer is not required for this. We just need to mix all the ingredients and use the tip of our fingers to rub them together to form a soft dough.

Ingredients

  • 1 cup plain flour
  • 1 cup assorted nuts (pecan, walnut and almond)
  • 1/2 cup butter salted at room temperature
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • powdered sugar

Instructions

  • Toast the assorted nuts.
  • Manually chop them into smaller pieces. You may also use food processor to do this.
  • In a large bowl, combine flour, chopped nuts, sugar, vanilla extract and butter.
  • Use the tip of your fingers to rub butter with the rest of the ingredients until they form a soft dough.
  • Form dough into a ball, cover it and refrigerate for 30 minutes.
  • Roll dough into small balls.
  • Bake at 170C for 20 minutes.
  • Roll the balls in powdered sugar while they are still warm.
  • Leave the balls to cool for about 15 minutes.
  • Once cooled, coat with powdered sugar again.
  • Assemble your snowman. I used condensed milk as 'glue' to hold the eyes and nose together.

These adorable snowman cookies can last up to 3 days at room temperature. It is best to refrigerate them and only take them out before serving as they last longer up to two weeks this way.
