Tom Yam Noodles To Warm Up Your Cold Days

There are a variety of brands and qualities to egg noodles and a typically healthy selection of egg noodles are:

As opposed to the coconut-based curries you may be familiar with, tom yam soups are much lower in fat and calorie content. It typically consists of less than 100 calories per serving!

Tom Yam Noodles

Ingredients

  • to taste Water
  • Egg noodles
  • 3 cloves Garlic
  • 2 stalks Lemongrass
  • 200 g Diced chicken
  • 200 g Prawns
  • 2 tbsp Tom yam paste
  • 1 tbsp Chili paste
  • 1 inch Galangal
  • Coriander roots
  • 4-5 Kaffir lime leaves
  • 13-15 Bird's eye cili sliced in the middle
  • 1/2 Holland onions
  • 100 g Sliced baby corns
  • 100 g Cauliflower diced
  • 4-5 Cherry tomatoes
  • Lime juice
  • 2 tbsp Evaporated milk
  • 1 Chicken cube
  • Coriander leaves
  • to taste Salt

Instructions

  • Add water into your boiling pot according to your desired measurement for the tom yam soup.
  • Add in the garlic, lemongrass stalks and chicken first.
  • Next, add into the tom yam and chili paste along with the galangal, coriander roots, kaffir lime leaves, bird's eye chili, sliced Holland onions, baby corns, cauliflower, cherry tomatoes and lime juice.
  • Add in prawns, evaporated milk, and stir well.
  • Leave to boil then spinkle in your chicken cube and salt to taste. Leave to simmer for another few mintues.
  • As your soup simmers, add coriander leaves. Stir well and leave to simmer for another 4-5 minutes.
  • Once your soup is boiling, it's time for your egg noodles. Boil your desired portion of egg noodles beforehand (this should take 5-10 minutes) and add to your boiling pot of tom yam noodles.
  • Leave to boil and simmer for at least another 5 minutes. And you're done!

This bowl of noodle soup will surely make good company when served hot and on particularly cold or sickly days.
