5 Delicious Vegetable Recipes for Mummies in Confinement

Postpartum confinement can be a hard time for many new mums.

And if you’re anything like how I was, I’m sure you’re starting to feel bored from the limited range of food in your menu right now.

So, in this article we will be showing you some confinement recipes featuring vegetable dishes.

These vegetable dishes are all safe for new mothers’ consumptions; so don’t fret!

Noni Leaf Kerabu

Noni, or mengkudu leaves, are rich in multivitamins and have anti-inflammatory properties that can help new mummies heal properly.

Ingredients

  • 200 g Noni Sprouts (daun mengkudu muda)
  • 3 tsp Grated coconut
  • ½ Yellow Onion julienned
  • 1 tsp Vinegar
  • Salt to taste
  • Sugar to taste

Instructions

  • Blanch noni sprouts for three to five seconds. Drain and toss.
  • Slice sprouts into one-inch slices. Set aside.
  • Slice yellow onions into thin slices.
  • Combine noni sprout slices with yellow onion slices, grated coconut and vinegar in one bowl.
  • Season with salt and sugar to taste. Mix to incorporate and serve.

Anchovy and Pennywort Kerabu

Another kerabu dish, this time with anchovies and some pennywort (pegaga)! Perfect for mummies who love anchovies and a more kampung flavour.

Ingredients

  • 200 g Pennywort (pegaga)
  • 1 Yellow onion julienned
  • 3 tbsp Grated coconut
  • 1 tsp Vinegar
  • 3 tsp Anchovies
  • Cooking oil
  • Salt to taste
  • Sugar to taste

Instructions

  • Clean pennywort leaves and cut into one inch in length. Set aside.
  • Heat up cooking oil and fry anchovies until crispy. Set aside.
  • Julienne yellow onions and add into one bowl. Combine anchovies, yellow onions, pennywort, and grated coconut into one bowl. Mix to combine.
  • Add salt and sugar to taste. Mix again to combine. Ready to serve.

Pennywort Kerabu

A more versatile version of the kerabu, with no anchovies. Great for mummies who don't like or can't consume fish.

Ingredients

  • Pennywort julienned
  • 1 clove Garlic crushed
  • 2 bulbs Shallots crushed
  • 1 tsp Coarse black pepper powder
  • ½ inch Ginger crushed
  • 1 handful Grated coconut (white flesh only)
  • Indian mackerel (Ikan kembung) steamed, take the flesh
  • Tamarind juice to taste

Instructions

  • Fry all the crushed ingredients in a pan until fragrant.
  • Add fish meat, grated coconut, salt and some tamarind juice. Mix to combine.
  • Once combined, add pennywort leaves and immediately serve.

Notes

It is advisable to not cook the pennywort leaves for too long as it will lose its nutrients the longer it is cooked.

White Radish Soup

A nice and comfy soup that's light, but still flavourful. Perfect as a rainy-day dish for mummies in confinement.

Ingredients

  • ½ Chicken
  • 1 White Radish
  • 2-3 bulbs Garlic
  • 2-3 bulbs Shallots
  • ½ inch Ginger
  • 1 packet Vegetable Soup Seasoning
  • 1 cube Chicken Stock

Instructions

  • Thinly slice garlic, shallots, and ginger. Sauté with some cooking oil.
  • In a pot, pour 3 cups plain water. Add chicken and soup seasoning and bring to a boil.
  • Once boiling, add chicken stock cube. Season with black pepper and salt.
  • Add sliced white radishes into soup and cook until ready.
  • Garnish with fried shallots or Chinese leaf celeries. Ready to serve.

Mustard Leaf and Tofu Soup

A soupy dish featuring nutritious mustard greens and some soft tofu pieces.

Ingredients

  • 2 stalks Mustard Leaves
  • 2 bulbs Shallots minced
  • 1 bulb Garlic minced
  • 2 blocks Tofu cubed
  • 2 cups Plain Water

Instructions

  • Mince shallots and garlic. Add into a pan with cooking oil and fry until fragrant.
  • Add water and tofu. Cook until boiling.
  • Add spinach into soup. Season with salt and pepper to taste.

These healthy confinement recipes are so easy to make that even your non-chef spouse could make it!

Hopefully new mums can enjoy a slightly wider variety of dishes while in confinement.
