A ‘Ganu Twist to Your Braised Noodles

Did you know the Mee Rebus takes different forms across Malaysian states?

For one thing, the East Coast of Peninsular Malaysia enjoys this bowl of braised noodles in clear bone or beef broth. The rest of the states are more familiar with the aromatic spicy blend of thick potato-based gravy.

Today, we shall explore the classic Terengganu braised noodles dish, Mee Rebus Ganu! 

This bowl of noodles is a delicious balance between chicken and seafood, its soup light with a touch of spice and tang from the sambal kicap.

Just imagine a steaming hot serving of slurpy noodle soup on drizzly afternoons. A meal easy to make and budget-friendly; soft egg noodles accompanied with fresh prawns, cherry tomatoes, crispy greens, and melt-in-the-mouth boiled egg.

Every mouthful is a light blend of a spectrum of flavours, light yet simply delightful!

'Ganu Braised Noodles (Mee Rebus Ganu)

Ingredients

Main Ingredients

  • 400-500 g egg noodles
  • 1 large red onion
  • 2 cloves garlic
  • 1 inch ginger
  • 1 diced carrot
  • 1 tsp bone broth powder
  • 100 g chicken
  • 100 g fishballs
  • 100 g prawns
  • 1-2 cups bok choy
  • 1 egg
  • 2 cups water
  • salt (to taste)
  • cooking oil
  • 2-3 cherry tomatoes

Diced Chili Soy Sauce

  • 2 tbsp salted soy sauce
  • 1 tbsp lime juice
  • 2-3 diced bird's eye chili

Instructions

Preparation (Braised Noodles)

  • Blend the onions, garlic, ginger together and saute the mixture in an oil-heated pot until fragrant.
  • Add in chicken pieces and fish balls to simmer along in the heated pot. Leave to cook in the pot for 5 minutes.
  • Add in the bone broth power along with 2 cups of water then, stir well.
  • Add in the vegetables (diced carrot and bok choy) along with your prawns. Leave in the pot until boiling.
  • Once the water is boiling, it's time to drop in your egg noodles and wait for another 4-5 minutes for the noodles to soften up.
  • Finally, add in your cherry tomatoes along with a cracked egg. Leave for another 5 minutes to cook and simmer up.
  • Last but not least, enjoy with a dash of homemade Malay-style chili soy sauce!

Preparation (Diced Chili Soy Sauce)

  • Mix and stir well together with the soy sauce, lime juice, and diced bird's eye chili.
  • Serve separately to be enjoyed alongside the bowl of steaming hot noodles!
