Asian Fusion: The Egg Noodle Bolognese

Who would’ve thought that a Bolognese dish can handle a twist of Asian fusion? Well, one of our Ibuencers, Kinah —umikitchen88 on Instagram—surely did!

This variation of a Bolognese meal may even be slightly healthier compared to a pasta-based dish. In comparison to the average pasta, egg noodles consist of slightly lower carbs, calories, proteins, and essential amino acids.

The main difference between paste and egg noodles is really in the egg content of the noodles. The latter has a much higher consistency of eggs and if you manage to grab quality egg noodles, they will have been enriched with minerals and vitamins, resulting in an increased nutritional value, typically like below:

As you can see, a typical serving of egg noodles will have more than a sufficient amount of nutrition for daily consumption! Selenium is a special type of protein our body requires in small amounts. Noodle Bolognese

Ingredients

Noodle Preparation

  • Flat egg noodles or noodles of your choice
  • Water
  • Salt
  • Cooking oil

Meatball Sauce Preparation

  • 1/2 Holland onions finely chopped
  • 2 cloves garlic minced
  • 1/2 cup minced beef
  • 10 meatballs
  • 1 cup spaghetti sauce
  • 1/3 cup diced carrots
  • 1/3 cup capsicum
  • tomatoes
  • 2 cups boiled noodle water
  • 1 tbsp oregano
  • 1 tbsp parmesan cheese
  • salt to taste

Instructions

Noodles Preparation

  • Heat up a pot of salted water and add in your egg noodles once the water starts boiling.
  • Drain the water once the noodles are cooked to your liking and stir well with oil (for a healthier substitute, you may opt for olive oil or unsalted butter) before setting aside.

Meatball Sauce Preparation

  • Heat up your cooking pot with oil and sauté the onions and garlic until fragrant. This is cue to add in your minced beef.
  • Next, when your minced beef is half cooked, add in your meatballs and stir well.
  • Then comes the carrots, diced tomatoes, and capsicums. Stir often until fragrant, then pour in spaghetti sauce of your choice.
  • For a less thick consistency, add in two cups of the boiled water from cooking your noodles.
  • Finally, add in the oregano, parmesan cheese, and salt to taste. Mix well and leave to simmer and boil over.
  • And you're done! Be sure to remember to sprinkle in a dash of parmesan upon serving for a more cheesy touch.
