Sotong Masak Kicap

Fans of squid will love this classic Malaysian side dish. It can be eaten with just plan white rice and has the signature umami flavour of soy sauce. Perfect for those with sweet and savoury preferences.

Ingredients

  • 2 potatoes boiled until fork tender
  • garlic
  • red onion
  • ginger
  • chili paste
  • cinnamon
  • cloves
  • cardamom
  • star anise
  • 2 tomatoes
  • 3 bird's eye chilies
  • 1 Holland onion cut into rings
  • thick soy sauce
  • sweet soy sauce
  • oyster sauce
  • squid

Instructions

  • Grind onion, garlic and ginger into a fine paste.
  • In a wok, heat oil under medium flame, and fry paste until fragrant.
  • Add spices and chili paste and fry until the oil separates.
  • Add the thick soy sauce, sweet soy sauce, oyster sauce and a little bit of water.
  • Add in the squid and stir well until cooked.
  • Add in the cooked potatoes, onion rings and tomatoes.

This chicken side dish is popular because of its flavour and versatility. There are so many ways to make black pepper chicken. Plus, it fits with anything too but is usually enjoyed with white rice.

  • chicken

  • cherry tomatoes

Instructions

  • Blend onion, garlic and ginger in a bit of water.
  • Marinade chicken pieces with the paste along with some black pepper sauce, powdered black pepper and mixed herbs.
  • Allow to marinade for 30 minutes.
  • In a pan heat some oil under medium heat and fry the marinated chicken until cooked.
  • Add seasoning, salt, and cherry tomatoes.
  • Serve warm or room temperature with white rice.

Instructions

  • Cut the tripe into small bite sized pieces.
  • Boil the tripe in a pot full of water until tender. Drain and set aside.
  • Finely slice the salem leaves, kaffir lime leaves, onions, chilies, tomatoes, lemongrass and torch ginger.
  • In a bowl, combine the vegetables and aromatics along with a spoonful of kerisik, calamansi lime juice, salt and sugar to taste.
  • Serve as is.

Instructions

  • Blend onion, garlic, chilies, shrimp paste, and tomatoes with a little bit of water.
  • Fry the anchovies until crispy.
  • Drain and set aside.
  • In the same pan of oil, pour in the blended mixture from earlier and cook until the oil has separated.
  • Add back in the fried anchovies and petai.
  • Stir to combine. Serve with white rice.

  • Add in the chicken and veggies of your choice.
  • Add in some water, stir well and cover until veggies are tender and cooked.
  • Serve with white rice.
