Preparing lunch boxes for children is one way to ensure that our children eat a balanced meal at school.

The food that we prepare also is to ensure that it helps in maintaining their energy levels throughout the day.

There are various styles, tips, and techniques to prepare lunchboxes for our kids. Mummy has to be creative every day (more like every morning) and always change the menu so that our children will finish eating the lunchbox we prepared for them.

Black Pepper Sausage Cocktail and Scrambled Egg

Ingredients

  • 10 pcs cocktail sausages
  • 1 tbsp black pepper sauce
  • 1 tbsp chili sauce
  • 1 tsp black pepper powder
  • 1 clove of garlic (finely chopped)
  • Oil (for frying and sauteing)

Ingredient for scrambled egg

  • 2 pcs eggs
  • ½ tomato (remove the seeds and cut into fine dice)
  • 2 tbsp fresh milk
  • 1 tsp pepper powder
  • 1 tbsp butter
  • Salt

Additional ingredients

  • Boiled corn
  • Pear
  • Fried rice

Instructions

  • Heat the oil, fry the sausage for a while, and drain the oil.
  • Remove the remaining oil, and fry the garlic until golden.
  • Add oyster sauce and black pepper sauce, stir well.
  • Add a little water, stir and add the cocktail.
  • Season with a little salt and sprinkle black pepper powder.
  • Mix well, turn off the heat.
  • To prepare the scrambled eggs, break the eggs in a bowl.
  • Add milk, tomatoes, salt and pepper. Stir well.
  • Heat a little butter in a pan, then pour the egg mixture.
  • Stir well until the egg is lumpy.
  • Put in the supply with the sausage cocktail.
  • If you have it, you can add boiled corn, fried rice and fruit.

Notes

Black pepper sausage cocktail can also be paired with others such as baked bread or fried vermicelli.

Rice Fritter with Potatoes

  • 1 cup white rice (grind with a little water)
  • 2 potatoes (boil and mash)
  • 1 cup wheat flour
  • 1 tsp chicken seasoning powder
  • A few slices of spring onion
  • A few slices of red Bengal chili
  • A little bit of salt
  • Oil to fry

Additional ingredients

  • Fried chicken
  • Thai chili sauce
  • Salad
  • Cherry tomato

Instructions

  • Mix the ground rice with mashed potatoes in a mixing bowl.
  • Mix well, add sliced onion and Bengal chili, chicken seasoning powder, and enough salt.
  • Mix again and add flour little by little until it becomes a suitable mixture.
  • Heat oil, and fry until golden.
  • Serve it with Thai chili sauce and fried chicken as a side dish.

Egg Pasta Muffin with Fries

Ingredients

  • 1 bowl pasta (boil and toss)
  • 4 eggs
  • ½ cup fresh milk
  • ½ red Bengal chili finely diced
  • 2 spring onions finely sliced
  • 1 tsp chicken seasoning powder
  • 1 tsp pepper powder
  • Salt

Instructions

  • Break the eggs in a bowl, and stir well. Add liquid milk, salt, chicken seasoning powder, and pepper, and keep stirring again.
  • Then add sliced Bengal chili and spring onion. Stir for a while and set aside.
  • Grease an aluminum foil bowl with a little oil, then put the pasta in it (only fill it half full).
  • Then pour the egg mixture inside until it covers the pasta.
  • Heat up the steamer, and steam the muffins for about 15-20 minutes.
  • Mummy can serve it with some apples and fries.

Notes

To save more time, Mummy can prepare the muffins from the night before and reheat it in the morning.

Baked Macaroni and Cheese

Ingredients

  • 250 gram macaroni (boil and toss)
  • 100 gram minced meat
  • 150 gram grated mozzarella cheese
  • 1 tbsp oregano powder
  • 1 tomato (discard the seeds and small dice)
  • 4 tbsp Bolognese sauce
  • 2 tbsp chili sauce
  • 2 cloves of garlic (finely chopped)
  • ½ onion (finely chopped)
  • 3 butter
  • Salt and sugar to taste

Additional ingredients

  • Apple
  • Cherry tomatoes
  • Salad

Instructions

  • Heat the butter in a pan, saute red, and white onions until fragrant.
  • Add minced meat, stir until the meat changes colour.
  • Next, add the Bolognese sauce, and chili sauce.
  • Stir well, then add macaroni and finely diced tomatoes.
  • Season with salt and sugar to taste.
  • Turn off the heat.
  • Heat the oven to a temperature of 200°C.
  • Meanwhile put the macaroni in an aluminum foil cup.
  • Sprinkle grated cheese and oregano powder on it.
  • Bake for about 15 minutes.
  • Once ready, serve with apple, salad and cherry tomatoes.

Eggs and Sausage Fried Rice

Ingredients

  • 1 bowl white rice
  • 1 egg
  • 1 tbsp oyster sauce
  • 1 tomato (remove seeds and dice)
  • 1 tbsp chicken seasoning

  • Some corns

Additional ingredients

  • 3 fried sausages (cut in half)
  • Cherry Tomatoes
  • Grapefruit

Instructions

  • Heat the oil, in a pan, break the egg in it, then stir until it becomes crumbly.
  • Add the rice, oyster sauce, and mix well.
  • Add corn and tomatoes in it, mix again.
  • Season with salt as needed.
  • Once cooked, turn off the heat and put the rice in the container.
  • Then add the salad, sausage and pour some sauce in the sausage.
  • Serve with grapes and cherries.

Notes

Mummy can also serve this fried rice with nuggets or fish fillet.

Tortilla Rolls with Egg and Black Pepper Meatballs

Ingredients

Ingredients for tortilla roll

  • 2 pieces tortilla
  • 2-3 eggs
  • 2 tbsp mayonnaise
  • 1 tsp black pepper powder
  • A pinch of salt

Ingredients for black pepper meatballs

  • 6-8 meatballs
  • 2 tbsp coarse black pepper sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili sauce
  • 1 tsp coarse black pepper powder
  • ½ cup water
  • 1 clove of garlic finely chopped
  • 2 red onion cloves finely chopped
  • 3 tbsp butter
  • Salt

Instructions

  • To prepare the rolled tortillas, heat a non-stick pan.
  • Heat the tortillas for a while and set aside.
  • Using the same pan, crack the egg in it.
  • Stir and make scrambled eggs. Take it out and put it in a bowl.
  • Mix mayonnaise together with black pepper powder and a little salt.
  • Mix it well and set it aside.
  • To prepare the meatballs. Heat the butter in a pan, fry the meatballs until browned. Lift out and set aside.
  • Using the same pan, Mummy fry the garlic and red onion until fragrant, then add all the sauce ingredients and water.
  • Stir well until the sauce thickens, season with a little salt.
  • Lastly, add the meatballs and black pepper powder.
  • Mix well then turn off the heat.
  • Arrange rolled tortillas in a container followed by meatballs and side ingredients such as boiled corn, lettuce, and tomatoes.
  • Ready to be served!

Notes

On different days, you can change the egg filling with tuna and/or mayonnaise for your kids.

Rice Balls with Chicken Teriyaki

Ingredients

Ingredients for rice balls

  • 1 cup of white rice (cook with ¼ glutinous rice)
  • ¼ cup cup glutinous rice
  • 1 sausage (boiled and finely chopped)
  • 1 tsp sesame oil
  • A little slice of seaweed
  • A few slices of coriander leaves
  • A few slices of spring onion

Ingredients for Chicken Teriyaki

  • 6 chicken drumsticks
  • 1 tsp soy sauce
  • 1 tsp young ginger
  • 1 garlic (finely chopped)
  • 2 shallots (finely chopped)
  • 1 tsp sesame oil
  • 1 tbsp chili powder
  • 1 tbsp of brown sugar
  • 1 tbsp of vinegar
  • Cooking oil for frying and sauteing
  • Salt
  • Boiled corn
  • Salad

Instructions

  • Mix the sausage and all the sliced ingredients in one bowl.
  • Season with sesame oil.
  • Mix well and form into a ball (about the size of a ping pong ball). Set aside.
  • Next, prepare the Teriyaki chicken.
  • Mix the soy sauce with chicken and ginger. Marinate it for a while.
  • Heat the oil in a pan, fry the half-cooked chicken, remove and set aside.
  • Remove a little oil left to fry.
  • Saute garlic and red onion.
  • Once fragrant, add chili sauce, chili powder, vinegar, brown sugar, and a little water.
  • Let the sauce simmer over medium heat for about two minutes.
  • Add the chicken, mix well and season with sesame oil and some salt.
  • Creatively arrange the rice balls, and chicken with some salad and/or corn into the lunchbox.

Notes

You can prepare the rice balls in advance - steam and store it in the fridge. In the morning, you just need to steam it for a while. You can also marinate the chicken from the night before.

Mixed Vegetables Fried Chicken

Ingredients

Ingredients for chicken

  • 4 pieces chicken drumette clean and toss
  • 1 tbsp wheat flour
  • 1 tsp pepper powder
  • 1 tsp oyster sauce
  • 1 tsp tomato sauce
  • 1 tbsp chicken seasoning powder
  • Sufficient oil to fry
  • Salt

Ingredients for mixed vegetables

  • 2 tbsp young corn kernels
  • 1 tbsp chicken seasoning powder
  • A few slices of carrot
  • A few slices of cauliflower
  • A few slices of broccoli

Additional ingredients

  • 1 small bowl of rice
  • 1 cauliflower muffin
  • Chili sauce

Instructions

  • For the fried chicken; mix the chicken with all of the sauces and chicken seasoning powder.
  • Then sprinkle wheat flour and salt to taste.
  • Heat the oil, fry the chicken until crisp, remove, and set aside.
  • Next, heat the water. Once boil, add the chicken seasoning powder and some salt if needed.
  • Blanch all the vegetables for about 2-3 minutes. Lift and drain.
  • After it has cooled, put the vegetables in the container with the fried chicken and rice.

Notes

To save time, marinate the chicken overnight and keep it in the fridge.
