As for me, I keep it simple just like the good old days. This delight is a healthy snack as it is steamed, not deep-fried. Wrapping it in banana leaves enhances the already aromatic banana kuih. Lepat Pisang Recipe Batter3 cups bananas (500g) ((mashed))1 cup plain flour (85g)1/2 cup sugar (60g)1 pinch saltFilling2 cups shredded coconut (100g) (white part only)1/4 tsp saltWrapBlanched banana leaves WRAPBlanch clean banana leaves for several minutes.The leaves are ready when you can bend them without breaking.Cut into desired size and set aside.BATTERPeel the banana skin.Mash the bananas.We need 3 cups of mashed bananas. Add 1/2 cup sugar.Add a pinch of salt.Mix well.Add 1 cup of plain flour.Mix well.FILLINGTo make the filling, add a little salt into the grated coconut and mix.CONSTRUCTING THE LEPAT PISANGScoop 1 tablespoon of batter onto a piece of banana leaf.Add a little grated coconut as filling and cover with another scoop of banana batter.Fold the banana leaf to wrap.Steam for 20 minutes.
